Spaghetti meat sauce... what to do with it when you have cooked way too much? Just like what I had last week. As I have taken a challenge to cook variations of Spaghetti every week, I ended up with so much meat sauce, it was not funny.
Since I really don't like throwing food, especially tasty ones, I always find ways to incorporate it to other dishes, sometimes I even manage to up-cycle them.
This time, I took the meat out of the spaghetti sauce.
On a separate bowl, I beat eggs, add salt and pepper, pour in a heated and oiled skillet, spoon some meat on top of the egg and fry it ala frittata. Once done, I served it with rice with the remaining sauce drizzled on top of it.
I'm pretty sure it would have also tasted good as a sandwich filling or a filling for lettuce wrap. I have to keep that in mind next time I go over board with the Super Meaty Spaghetti Sauce.
