Flatten Sweet Rice Cake (aka Palitaw!)

Palitaw is a flatten sweet rice cake that we are traditionally accustomed to, back home. We normally eat it as an afternoon snack, just after siesta. Not too often though, after all, it's rice! But I have to confess, I won't mind having this at least once a week. I'm so in love with this snack that I can actually down 10 of this (and obviously regret it later on) in one seating.

"Litaw" is in essense "to appear" which is exactly what Palitaw does when it cooks... it floats to the surface.

Ingredients:
500 grams glutinous rice powder
1 3/4 cup water
sesame seeds, toasted
sugar
shredded coconut

40 pcs (4 generous piece per person)

Procedures:
Mix the glutinous powder and water until it forms a ball. Not too wet, not too dry.

Form small balls and flatten to an oval shape.

Drop each pieces to the boiling water, 3 batches at a time. Once they float to the surface, fish them out one by one and drain the excess water on a kitchen towel.

Roll them on coconut shreds, sprinkle with sesame seeds and enough sugar to marry the taste well.

Enjoy this simple yet sooooooo enjoyable snack.

For the ones who aren't accustomed to this yummy concoction, trust me when I say this is special. Though it'll be really, really, really heavy, for some reason one will never be enough for anyone.
