My intention today was to re-create Minny Jackson's Southern Fried Chicken. It called for buttermilk and so I have to find out what's a substitute since I don't have it available.
There was the milk and vinegar combination but this particular recipe intrigued me. Is it really possible? Can I really do it?
Apparently I can! It was so darn easy!
Tip 1: If you're making this the first time, don't leave your blender or processor whizzing unattended. The butter stage varies per power level, per machine and cream you use. So until then, don't wander away. Yup. I made a booboo on my first try. I wandered OUT OF THE HOUSE! But the 2nd try was seamless.
Let's just say, it went back to creamed stage. Not sure if it's the brand or maybe the cream was a pasteurized cream or it reached butter stage and I missed it. Either way don't make the same mistake.
Tip 2: Make sure you rinse your butter thoroughly with cold water.
Ingredients:
1 liter whipping cream (not the pasteurized one!)
Directions:
Pour your whipping cream in your food processor.
Set it to power level 9 and keep it churning for 5 - 10 minutes.
The cream will first pass the whipped cream stage, around a minute or two.
Your processor's sound will suddenly change when the butter is separated. Whizzing sound will become flapping sound as the butter hits the container's side.
Using a cheesecloth or a fine mesh drain buttermilk onto a jug for later use. You can use it to marinate your chicken for awesome fried chicken ala Minny Jackson (The Help) or the all time favourite... pancakes!
Rinse your butter under running COLD water to get rid of remaining buttermilk. Otherwise your butter will go rancid quickly. Once water becomes clear. Drain butter throughly.
Add salt if you like it salted. I only use unsalted butter so it's perfect. You can also make garlic flavoured butter by adding a mashed roasted garlic with your butter. You're basically home free once you get the yellow butter out of the procesor. You can do whatever you want.
